ABOUT BREANNA
Baking has always been my thing. Even as a child, I loved creating treats in the kitchen and remember getting grounded from baking as a punishment.
Today, I’m a busy mom of four and wife to my best friend, Chris. I began eating paleo when I found out I had a few autoimmune diseases (Hashimoto’s, Celiac, Undifferentiated Connective Tissue Disease). I was too young to feel sick, fatigued, stiff, and in pain all the time. I wanted to be the active, energetic mom I knew I used to be - and one my kids deserved. I knew I had to find a way to help me get my life and body back.
I started eating gluten-free, and it helped me tremendously. Eliminating dairy helped me even more, much to my dismay. However, when I started eating Paleo, and then the Paleo Autoimmune Protocol, my symptoms truly vanished one-by-one. My first two cookbooks, He Won’t Know It’s Paleo and Holiday on the Autoimmune Protocol are entirely based on the paleo autoimmune protocol. My third cookbook, Blend and Bake Paleo requires a few reintroductions (eggs, nuts, chocolate, for example), but nut-free alternatives are listed in the Tips and Tricks section.
After 18 months of strictly following the autoimmune protocol, I began making a few successful reintroductions, and now eat a diet that consists of:
No grains (including no gluten)
Very minimal dairy (I try to leave it to holidays and special occasions, and stick with butter, sheep cheese, and goat cheese.)
Limited eggs (I will eat them baked into recipes, but usually not by themselves.)
No nightshades (nightshades include tomatoes, white potatoes, and peppers)
I’m sure my diet sounds very limited to most, and while I would love to eat whatever I want, I know I cannot. When others ask me if it’s hard, my answer is always the same:
“Yes. It is hard eating this way, but it is much harder being sick all the time.”
So whether you eat paleo for general wellness, for fitness or illness reasons, or are simply encouraging a loved one who needs help changing their diet, I hope my cookbooks give you real life, quick-and-easy, and delicious ways to enjoy food!
