Living in South Texas and absolutely loving spicy food, I practically feared having to go nightshade-free. Unfortunately, it became obvious I had to just that. I must say though, between this recipe and Nightshade-free Red Salsa, I feel like I never miss out! If you don’t like spicy, try adding less white onion. Maybe start with 1/4, and add from there. You could even use a yellow onion, since they are sweeter than spicy.
PS – I take this dish to get togethers often and it is always devoured!
