This Shrimp Scampi recipe is one I have been making for well over a year and keep meaning to post. The problem is that I cook new things all the time but, before I can post it, I have to photograph it… which takes time and is the reason it takes me forever to post a new recipe these days. :)
This entree is a crowd-pleaser. I often serve this over Cappellos paleo fettuccine noodles for the family and zucchini noodles for me. It’s wonderful as a stand-alone entree, too. I make this almost any time an out-of-town guest comes to visit. In fact, my father-in-law insists on it when he’s here. It’s very easy and fast, but looks like I’ve spent all day slaving over a gourmet meal. (If you haven’t noticed, these are my FAVORITE kind of meals! Fast + Fancy!)
A few notes: If you’re OK with dairy, feel free to substitute the oil for grassfed butter in the same amount.
