Paleo Salmon Croquettes with Dill Aoli

I had canned wild Alaskan salmon sitting in my pantry for way too long. I’m not sure why I didn’t do something with it earlier, but I’m glad I waited for a little creativity to hit because the end product was delicious! A classic entree turned AIP, these croquettes come together very quickly with canned salmon and the option to use canned sweet potato as well. The dipping dill aoli is creamy and rich – definitely a meal that will make you feel like you’re cheating!

Salmon Croquettes with Dill Aoli

A classic entree turned AIP, these croquettes come together very quickly with canned Salmon and the option to use canned sweet potato puree as well. The dipping aoli is creamy and rich. This is definitely a meal that will make you feel like you're cheating!

Ingredients
  • 2 tbsp cooking fat or oil of choice, for frying
  • 2 - 6oz cans wild Alaskan salmon, drained well (be sure it contains no non-AIP ingredients)
  • 1 cup mashed sweet potatoes (boiled and mashed or canned pureed)
  • 3 tbsp chopped green onion
  • 2 tsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/8 tsp coarse black pepper (Caution: the strictest form of the AIP eliminates black pepper. Leave it out if you are sensitive.)
  • Dill Aoli (recipe to follow)
Directions
  1. In medium bowl, stir all ingredients together except for oil.
  2. Heat oil in large frying pan over med-high heat.
  3. Form 6 tightly-packed patties, each 1/3 cup.
  4. Fry for 2-3 minutes on each side, until browned. Flip carefully since there is no egg to bind them together.
  5. Serve with dill aoli and lemon wedges.
