I used to hate salads. I mean, who wants to eat a bowl full of lettuce? Not me. To be frankly honest, I’m still not a huge fan of lettuce, but my opinion on salad has changed a lot! I’ve noticed that the healthier I eat and the more veggies I eat, the more and more I crave them. And I’ve come to adore salads, especially when made with a mixture and variety of fresh greens and other fruits and veggies.

And salads are perfect for summer because they are quick and easy to make and can be either light and refreshing or filling and hearty depending on what you throw in them. This Kale Waldorf salad is a perfect balance of cool and refreshing for the summer, but enough flavor to fill you up and satisfy your tastebuds.
Cook’s Tip: I like to eat this as an appetizer with He Won’t Know It’s Paleo‘s Turkey and Zucchini Lasagna or as a side for my Crispy Coconut Shrimp with Spicy Mango Dipping Sauce. If you’re feeling like something light and easy, you can also top with cooked chicken for a one dish meal!
