Baked Cinnamon Apples

This is a recipe we’ve enjoyed for a long time for desserts and after-school snacks. When I ate Paleo, but not the Autoimmune Protocol, I used to add chocolate chips and pecans. (Sorry bring up our old flames!) These apples, however, are also a wonderful treat with the warm flavors of cinnamon and honey!

A wonderful treat with the warm flavors or cinnamon and honey.

Ingredients
  • 4 apples
  • 1 tsp cinnamon
  • 2 tbsp honey
  • 3 tbsp coconut oil
Directions
  1. Preheat oven to 350.
  2. Cut out the core and seeds of the apple without cutting through the bottom.
  3. Mix together the coconut oil, honey and cinnamon in a small dish.
  4. Stuff apples with with cinnamon mixture.
  5. Bake for 35-55 minutes, depending on the size of the apples. Apples are done when a toothpick inserts easy into flesh of the apple.
