This is a recipe we’ve enjoyed for a long time for desserts and after-school snacks. When I ate Paleo, but not the Autoimmune Protocol, I used to add chocolate chips and pecans. (Sorry bring up our old flames!) These apples, however, are also a wonderful treat with the warm flavors of cinnamon and honey!
- 4 apples
- 1 tsp cinnamon
- 2 tbsp honey
- 3 tbsp coconut oil
- Preheat oven to 350.
- Cut out the core and seeds of the apple without cutting through the bottom.
- Mix together the coconut oil, honey and cinnamon in a small dish.
- Stuff apples with with cinnamon mixture.
- Bake for 35-55 minutes, depending on the size of the apples. Apples are done when a toothpick inserts easy into flesh of the apple.
