AIP stands for the Autoimmune Protocol, which is a subset of the paleo diet meant to reduce or eliminate symptoms from autoimmune diseases like lupus, multiple sclerosis, celiac disease, and rheumatoid arthritis, to name a few.  Being very strict, however, doesn’t mean it has to be boring! I hope this blog provides a ray of hope to those following the diet: You can still enjoy great comfort food and have fun while preparing it!

For all of my recipes, including dozens that are not available on this site, my cookbook is a great resource for all-American foods that are AIP friendly.
